Sweet Potato Latkes Recipe

Fill a bowl with lightly salted water. Pat the grated sweet potato dry with a cloth or paper towels then place into a bowl. Heat oil in large heavy skillet to 375 degrees f 190 degrees c.
In a 12 inch skillet heat 1 4 cup vegetable oil over medium high heat. 2 tablespoons or 1 4 cup olive oil grate the sweet potato and onion and place in a medium bowl. Discard remaining potato and onion or reserve for another use working in.
Drain on paper towels. In a large bowl combine sweet potatoes eggs brown sugar flour cloves and cinnamon. Add in scallions flour baking powder beaten eggs cayenne pepper salt and black pepper.
