Warm over low heat until the oil is hot but not smoking. Cover and bring to a boil. Reduce the heat to low and simmer for 45 minutes.
Rinse the lentils thoroughly. Once boiling reduce heat and let it simmer until everything is soft approx. Cook until vegetables and lentils are softened 20 to 25 minutes.
