Turn the chops over and slather about 1 teaspoon mustard on the other side. Pat lamb chops dry with a paper towel and season with 2 teaspoons salt and 1 teaspoon pepper. Rub both sides of each chop with pepper and place in the prepared roasting pan.
Combine crumbs thyme garlic pepper. Brush the lamb chops with a little olive oil and grill under a medium heat for 3 4 mins on each side. Broil for 2 3 minutes or until desired doneness and the topping is golden.
Melt half the butter in a pan and sauté the onion and garlic for 5 mins until soft. Mustard on one side of each chop and bring to room temperature 10 to 15 minutes. It s about 2 3 minutes.
Brush chops all over with the remaining mustard. Broil 4 from heat source for 5 minutes. Roast mustard side up until the chops are browned on top about 5 minutes.
