Recipe Ground Beef Eggplant Zucchini
Place the eggplant and zucchini in a colander and sprinkle.

Rinse the eggplant and zucchini and slice them into inch thick rounds. Add them to a medium bowl and toss with 1 tbsp. 5 tbsp extra virgin olive oil.
Sprinkle eggplant with salt and sauté in olive oil until softened. Tender 10 15 minutes longer. Baking pans coated with cooking spray.
