Recipe Lentil Squash Soup
Heat the oil over medium low heat in a large heavy bottomed dutch oven or similar.
Recipe lentil squash soup. Step 2 cover and cook on low heat setting for 8 to 9 hours or on high heat setting for 4 to 4 1 2 hours see tip. Having been disappointed by too many lentil soup recipes to count i set out to make the absolute best one. Cover and simmer the soup for 10 minutes.
Pour over the stock and season to taste. Add broth squash lentils and carrots. Stir in 1 cup of water if too thick season with salt if desired.
Working in 2 batches transfer mixture to a blender. Rinse and drain lentils. Blitz the soup with a stick blender until smooth then season to taste.
Ladle soup into oven proof soup bowls place bowls on a baking sheet. Add the remaining garlic and ginger and the butternut. Tip in the lentils the vegetable stock and coconut milk and give everything a good stir.
Heat the oil in a large saucepan add the squash and carrots sizzle for 1 min then stir in the curry powder and cook for 1 min more. Leave to simmer for another 10 minutes. Process until smooth about 1 minute.
Heat oil with butter in a large heavy pot over medium heat until foam subsides then cook squash onion carrot celery garlic ginger and 1 teaspoon salt stirring occasionally until vegetables. Ease is the name of the game for this soup. Bring to the boil then turn the heat down and simmer for 15 18 mins until everything is tender.
