Recipe Spanish Eggs Chorizo
Heat 1 tbsp oil in a non stick pan.
Recipe spanish eggs chorizo. Warm over medium high heat. Mix together to combine. Cook for about 4 5 minutes until the color has browned.
Whisk eggs and salt together in a bowl. Once the meat is browned add in six eggs and scramble with a spatula. Meanwhile coarsely chop 1 2 bunch fresh cilantro 1 2 cup and crumble 2 ounces queso fresco cheese 1 2 cup.
Cook and stir until eggs are set about 5 minutes. Sprinkle a little salt over the egg and place in the oven. Turn down the heat and simmer for 10 minutes.
Just heat a pan over medium high heat and add one pound of chorizo. Add the red wine vinegar and bubble for a minute then add the chopped tomatoes. Spray a large nonstick skillet with cooking spray.
Add the onions and peppers then cook for about 10 mins until soft. In a small bowl add paprika ground cumin ancho chili powder regular chili powder dried oregano dried coriander coarse kosher salt ground cinnamon and ground cloves. Then continue gently stirring until the eggs are just cooked through.
Spoon tomatoes into individual baking dishes with some sliced chorizo make a well in the middle and break one egg into each dish. Crack 1 large egg into each well. Make 4 indentations in the sauce then crack an egg into each.
