Zucchini Mashed Potatoes Recipe
In a frying pan add the olive oil and bring to frying temperature.
Zucchini mashed potatoes recipe. Add the crème fraîche and 1 teaspoon of olive oil. Peel and cube the potatoes and put in a pot with water to boil. Spray a loaf pan or pie pan with nonstick spray.
Heat 1 to 1 1 2 tablespoons oil in a non stick skillet over medium high heat. Cook bell pepper in oil and 1 tablespoon butter in a wide 4 quart heavy pot over moderately low heat stirring occasionally until softened 4 to 6 minutes. Add the potato mixture to the prepared pan and smooth the top.
Add the potatoes and heat through. Working in batches drop batter by heaping tablespoons into hot oil. Saute until softened about 5 minutes.
Sauté until softened about 5 minutes. Drain thoroughly and return to the pot. Return the pot to the heat and start mashing them you can do that with a fork or a potato masher some water will get out of them boil them for few minutes until the water evaporates.
Heat a medium skillet over medium high heat spray with non stick spray and add the zucchini. Add the chicken breasts and cook to 165º. Preheat your oven broiler.
Stir mashed potatoes flour milk egg butter and sea salt together in a bowl. Cook 15 to 17 minutes or until tender when pierced with a fork. Using a fork or potato masher mash to your desired consistency.
