Jerk Chicken Glaze Recipe
Combine ingredients in heavy saucepan and simmer 7 10 minutes over medium high heat.

Make the jerk rub by combining the salt allspice brown sugar onion powder garlic nutmeg pepper ginger cayenne pepper cinnamon and thyme. Pour most of the blended marinade mixture into bowl with chicken reserving a small amount to use as a basting sauce while cooking. Place 1 inch apart in pan.
While the chicken is baking make the glaze. Add the allspice berries brown sugar scallions garlic cloves scotch bonnet peppers soy sauce thyme cinnamon nutmeg salt and pepper to a food processor or a blender. Arrange the chicken pieces on the grill.
Simmer for for 10 15 minutes until reduced by 1 4 then remove from the heat. Sprinkle rub garlic and onions on the chicken patting rub into meat with your fingers. Pour over the chicken in the bag.
Blend well then mix in onions green onions garlic and habanero peppers until almost smooth. After 3 hours prepare the grill to high heat. Line 13x9 inch pan with foil.
I did not have allspice berries so i substituted ground allspice using one full. Cut the chicken into 1 inch cubes and add to a resealable zipper top bag. Refrigerate at least 1 hour.
