Recipe for lamb chops with sauce. Heat a large skillet over medium high heat. Remove from heat and stir in the butter. Season with salt and pepper and let the sauce barely simmer for 2 minutes then remove it from the heat liquidise half of it and then combine that with the rest along with the cream.
In a small saucepan saute onion in 1 teaspoon oil until tender. Add the oil to the skillet. Continue to cook and stir over medium high heat for about 5 minutes until the sauce has reduced by half.
Add chops to the pan cook 4 minutes. Bring to a boil. Let the lamb chops marinade for 30 minutes at room temperature.
Remove from the heat. Drizzle with 1 teaspoon oil. If you don t the sauce will be runny and not good.
In a large skillet heat 1 tablespoon of olive oil on medium heat and add lamb chops. Transfer lamb to 4 plates. Turn lamb over and sear 2 minutes more for medium rare.
Stir in butter and thyme. Place tomatoes on a double thickness of heavy duty foil. Place lamb chops on a large plate casserole and pour the marinade over the lamb chops.
