Recipe For Lemon Bars Using Cream Cheese
This lemon bars recipe produces a bar with a buttery crust and a super creamy lemon filling.
Recipe for lemon bars using cream cheese. Sprinkle the reserved crumb mixture evenly over lemon cheese layer. Mix on medium speed for 1 2 minutes until smooth scraping the sides of the bowl as necessary. Add the sour cream and lemon juice and beat the mixture on medium high speed until smooth about 1 minute.
Store in the refrigerator. Bake for 25 minutes longer or until lightly browned. Gradually blend in the powdered sugar.
Reserve 1 teaspoon of the lemon zest for later and add the remaining zest into the cream cheese along with the lemon juice and 1 2 cup of the granulated sugar. Press into a 9 x 13 pan ungreased. Then mix in the lemon juice eggs and vanilla until they are all incorporated into the cream cheese and sugar mixture.
Stop the mixer once or twice to scrape the bowl with a rubber spatula. Beat in confectioners sugar lemon juice and zest. Chill for 2 hours before serving.
Pour the cream cheese lemon mixture over the hot baked crust. Bake at 350 for 18 22 minutes or until center is set and edges are golden brown. Reserve 1 2 cup of this mixture and refrigerate it for later use.
Spread into a greased 13x9 in. When the crust is done spread the cream cheese filling over the crust and put it back into the oven for 30 minutes. Frost top and cut into bars.
