Recipe Kale Cranberry Salad
A member of the cabbage family kale has heavy textured elongated dark green leaves with tightly curled edges.
Recipe kale cranberry salad. You can make the lemon vinaigrette in advance. One you get your kale chopped up nice and fine you re ready to make kale salad. Stir until well combined.
Add cranberries and almonds to kale and set aside. Arrange the salad on a platter. I use curly kale which is what you most commonly find in grocery stores.
Lacinato kale would also be great for this salad. Serve topped with crumbled cheese if desired. In a separate bowl add olive oil dijon mustard maple syrup lemon juice lemon zest salt and pepper.
Whisk in oil honey orange zest orange juice salt and pepper. Add feta cheese walnuts and moist cranberries with their syrup. Add kale and massage the mixture gently with your hands until the kale is lightly wilted about 3 minutes.
Pour 1 2 tablespoons of the dressing over the kale and massage with your hands for 2 3 minutes. Pour about half over your kale and with your hands massage into the leaves until they re a bit wilted they will look a little less curly but will taste a lot better and will be easier to digest. You ll want to finely chop the kale so you don t have any large tough pieces.
Add a bit more dressing at a time to taste then toss cranberries and nuts if using. Sprinkle with cranberries and almonds. Add in the cranberry shallot mixture and almonds and toss to combine.
