Recipe Soup Lentil Sweet Potato
Tip into the pan with the stock lentils milk and seasoning then simmer covered for 20 mins.
Recipe soup lentil sweet potato. Bring a large pot to medium heat and add a splash of neutral cooking oil or vegetable broth. Cover and bring to the boil. Meanwhile peel then grate the sweet potatoes.
Add remaining 1 tbsp olive oil and spices. Sweet potato should be slightly tender when pierced with a fork or knife. Add the rosemary thyme and black pepper to taste then sauté for an additional 1 to 2 minutes next add the lentils sweet potatoes and vegetable broth to the pot.
Stir in vegetable broth tomatoes sweet potatoes and lentils. Add the onion and garlic and sauté until translucent 3 to 5 minutes. Blend until smooth using a stick blender.
Bring to a gentle boil then reduce heat cover and allow to simmer for 15 20 minutes stirring occasionally or until sweet potatoes and red lentils are tender. Peel and roughly chop the onions and sweet potatoes can be chunky. Tip in the onions apple garlic coriander stalks and ginger season then gently cook for 5 mins stirring every so often.
Heat 2 tbsp olive oil in a pot over medium high heat. Saute onion and carrot 4 minutes. Simmer until the potatoes and lentils are cooked about 20 30 minutes.
Peel and cut the sweet potatoes into 2cm chunks then peel and cut the onions into 2cm thick wedges. Add red lentils vegetable broth water turmeric cinnamon clove optional cayenne and sea salt and stir. Preheat the oven to 180ºc 350ºf gas 4.
