Recipe Lamb Shoulder Chops Oven
Heat a dash of oil in a large frying pan or use a casserole dish that can be used on the stove top and brown lamb shoulder chops on both sides.

How long you cook them for is up to you i personally don t mind the centres being cooked since i like the skins crisp but if you like your lamb pink give them 30 minutes if not 45 minutes. Season the lamb shoulder chops with salt and pepper.
An alternate method for cooking lamb chops is using your broiler. Serve the lamb chops with the cooking juices mashed potatoes and cabbage or another side vegetable along with warm biscuits or a loaf of hearty bread. The lamb will need to cook for 3 4 hours or until the meat is very tender and breaks up easily.
Brown both sides to a nice crust. Saute onion and garlic in reserved drippings until tender about 5 minutes. If you want to be sure they are cooked medium rare use a food thermometer.
Place the lamb chops on a baking tray and place in the preheated oven for 30 minutes until cooked. While the oven is heating heat a pan with a tablespoon of olive oil on a high heat. Preheat the skillet on very high heat and add lamb to the skillet.
Cook on both sides for about 6 minutes. Do not let the baking dish dry out and add a little more water or broth as needed. Sear lamb in hot oil until browned 1 to 2 minutes per side.
Remove the chops form the pan and let them rest on a plate for 3 to 5 minutes. Mix the onion spice mixture back with the lamb. Remove chops to a plate to drain reserving drippings in the skillet.
