Recipe Lemon Curd Microwave

Recipe lemon curd microwave. Stir in lemon juice lemon zest and butter. In a microwave safe bowl whisk together the sugar and eggs until smooth. Transfer the lemon curd to a bowl and cover with a layer of cling wrap directly touching the curd.
What you re looking for is the lemon curd to be just thick enough to coat the back of a spoon. It only took about 5 minutes to mix the ingredients together and then it was all microwaved for about 10 minutes on full power. Microwave the lemon and egg mixture for 3 4 minutes in 45 second intervals stirring between each interval until the mixture is thick.
In a microwave safe bowl whisk together the caster sugar and eggs until smooth. To make lemon curd in the microwave start by whisking together all of the ingredients in a microwave safe bowl. This took around 6 minutes for me using a 800w microwave.
Cook in the microwave for one minute intervals stirring after each minute until the mixture is thick enough to coat the back of a metal spoon. Add remainder of the strained lemon juice and beaten eggs. After about 3 5 minutes depending on your microwave the curd will have thickened so it coats the back of a metal spoon.
Remove from the microwave and pour into small sterilised jam jars. Whisk in the sugar eggs and lemon juice and whisk until smooth. Microwave on high in 1 minute increments making sure to remove the curd from the microwave and mix well after each increment.
Stir the lemon curd after 2 minutes and then place it back in the microwave for a final 30 seconds. In a microwave safe bowl whisk together the sugar and eggs until smooth. Microwave on high for 1 minute.
