Grease twelve 2 1 2 inch muffin cups or line with paper bake cups.

Spoon a rounded teaspoon of the lemon curd on top of the batter in each cup. In a large bowl add the flour sugar baking powder bicarbonate of soda and salt. In another bowl combine the eggs sour cream butter lemon zest and juice.
Heat the oven to 180c 160c fan gas 4. Bake for 15 20 minutes until risen and firm. Preheat the oven to 200 degrees celsius 390 fahreneheit.
