Recipe Zucchini Lasagna Roll Ups
Bake in preheated oven for 30 35 minutes until heated through and cheese is melted.
Recipe zucchini lasagna roll ups. Step 3 next trim the peel from both sides which will make the slices easier to roll up later on. In a small bowl combine ricotta 1 2 teaspoon italian seasoning salt and pepper. Prep zucchini slices per recipe below and bake until softened.
Prepare the zucchini roll ups set in a baking dish cover with plastic wrap then aluminum foil and place in the freezer for up to 2 months. Line 2 sheet pans with parchment paper and coat lightly with cooking spray or oil. Lay the zucchini cut side down.
Combine cheese mixture and spread over zucchini slices carefully rolling them up. Season with salt and pepper. Prepare the zucchini roll ups set in a baking dish cover with plastic wrap then aluminum foil and place in the fridge for up to 24 hours.
Top with marinara and cooked. Top roll ups with remaining 1 3 cup mozzarella and 2 tbsp parmesan. On each slice of zucchini spoon a thin layer of sauce spread ricotta mixture on top and sprinkle with mozzarella.
Lay sliced zucchini on a cutting board that is covered with a kitchen towel or paper towels. Leave the top peel intact. Slice zucchini lengthwise into twelve 1 8 in thick slices.
Roll up and secure with toothpicks. Spread ricotta mixture onto one side of each lasagna noodle. Preheat the oven to 425 f.
