Quarter the cooked potatoes and in batches pass them through a ricer or food mill into a large microwaveable bowl. While the potatoes are still hot cut each in potato in half lengthwise. In a large bowl mix mashed potatoes cream cheese sour cream milk onion salt and pepper.
Place potatoes and garlic in medium saucepan with enough salted if desired water to cover. Stir until smooth and the cream cheese and butter are melted. In a bowl mash potatoes with sour cream and cream cheese adding reserved water as needed to attain desired consistency.
Spread in a greased 13x9 in. Spray a slow cooker insert with nonstick spray and add mashed potato mixture. Cover reduce heat to medium and simmer for 25 minutes or until pototoes are tender.
Drain and shake potatoes to dry over low heat. Place potatoes in a large pot of lightly salted water. Step 2 cover the bowl tightly with plastic wrap and refrigerate for up to 2 days.
Bring to a boil. Place potatoes in a saucepan. Beat until light and fluffy.
