Melt butter on speed 2 for 2 minutes at 50 degrees. Whisk in lemon juice. To make eggs benedict toast the muffin halves top each half with a slice of warmed ham and a poached egg and spoon over a generous helping of hollandaise.
Mix all the ingredients in the bowl and heat 4 min 70degc speed 3. Whisk until lemon yellow and slightly thick about 1 minute. For a slightly thinner sauce cook on 80.
To reheat the sauce warm it in the microwave in 10 second increments until warm but not hot. Add egg yolks to a small saucepan. Place cubed butter into bowl.
