Place a metal rack over the foil on each pan. Add beef to bowl and turn to coat beef completely. Just holding it is not enough.
Cover the bowl with plastic wrap and marinate in the refrigerator 3 hours to overnight. Evenly thinly and against the grain are key. If you face problems to slicing it put it in the freezer long enough to firm it up for slicing.
