Heat a cast iron or other large skillet over medium high heat with enough oil to coat the pan and come up ever so slightly on the edges 1 8 high is plenty.
Place breaded tomato slices onto a plate while breading the rest. Coat well with the cornmeal or breadcrumbs. In a deep sided skillet heat a few inches of the bacon grease or vegetable oil to 375 f.
