Jerk Chicken Quarters Recipe
In a large resealable plastic bag combine the first seven ingredients.

Drain chicken discarding marinade. Marinate for a minimum of 2 hours for best results marinate overnight. To roast chicken in oven.
Toss the chicken pieces in the jerk spice cover and marinade in the fridge for 2 to 4 hours. Mix spices together in a small bowl. Cook the chicken until lightly charred about 3 minutes.
Dry the chicken quarters with paper towels and rub with oil. Make the jerk rub by combining the salt allspice brown sugar onion powder garlic nutmeg pepper ginger cayenne pepper cinnamon and thyme. In a bowl place chicken quarters and pierce each piece multiple times with a small knife to allow seasonings to penetrate the meat.
Step 2 preheat oven to 350 degrees f 175 degrees c. Then turn on broiler and broil chicken about 4 inches from heat until skin is browned and crisp 2 to 3 minutes. Generously rub the seasoning all over the chicken leg quarters.
Cut each chicken quarter diagonally 3 4 times at least 1 inch deep sprinkle booyah to both sides of chicken apply marinade to both sides of chicken making sure to get it inside the cuts. Then rinse off with cool water and drain. Trim off the excess skin and fat off the chicken but leave most of the skin you can remove it later before eating then pour the lime or lemon juice or vinegar over the trimmed chicken.
