Meatloaf Recipe With Mashed Potatoes On Top
In a large pot of cold salted water bring the potatoes to a boil over high heat.
Meatloaf recipe with mashed potatoes on top. Add salt and pepper to taste. When cool enough to handle remove and discard the skins and transfer the potatoes to a bowl. Sprinkle the potatoes with the grated cheddar cheese.
Boil for 20 minutes or until potatoes are cooked through. Add milk and using a potato masher ricer or in a food processor mash potatoes until smooth with no lumps. Lifting with foil place in slow cooker on top of potatoes.
Place a rack in a 15x10x1 in. Coat an 8 inch square baking dish with cooking spray. Remove from oven drain off any fat and evenly spread mashed potatoes over top.
Preheat the oven to 350 degrees. Bake until a thermometer reads 160 50 60 minutes. Preheat oven to 350 degrees f.
Add butter and bury under potatoes to allow it to melt. Remove from heat drain and return potatoes to cooking pot. Lower the heat to medium and cook until tender about 20 minutes.
In a large bowl combine eggs ketchup onion green pepper crushed saltines salt and pepper. Press foil up sides and over edges of slow cooker creating a bowl to contain meat loaf juices. Stir in milk and dry potatoes just until moistened.
