Then you cook them in olive oil for 2 3 minutes per side and they are ready. Spoon marinade evenly over both sides of lamb loin chops. Remove and keep warm.
Combine marinade ingredients garlic rosemary olive oil and salt in a small bowl. Heat the oil in a large non stick frying pan and cook the lamb for 10 mins turning once. Heat a cast iron skillet over medium high heat.
Only do half at a time to ensure you don t overcrowd the pan or bring down the temperature too much by adding a substance much cooler. Add the onion and cook for a further 2 4 mins. Let them cook and render some of the fat out into the pan for about 2 to 3 minutes.
Add wine to the same skillet stirring to loosen browned bits from pan. Carefully put in the lamb chops and sear them for about 4 minutes for medium rare doneness on each side. Cover with foil and let rest for 10 minutes before serving.
