Latkes Recipe Using Mashed Potatoes
Make sure the mixture is not too thin.

16 to 18 four inch latkes time. Melt butter on a large griddle at medium heat. Brown on both sides.
Pour 1 4 cup batter into hot pan. Smush 1 3 cup of the mixture in your hands to form a 3 inch diameter patty. You can also substitute 1 2 pound italian sausage for the bacon if you want a heartier quiche.
