Recipe Latkes Simply Potatoes

Recipe latkes simply potatoes. In a medium bowl stir the potatoes onion eggs flour and salt together. Leave the last potato in the water. Step 1 make the potato onion mixture.
Place large spoonfuls of the potato mixture into the hot oil pressing down on them to form 1 4 to 1 2 inch thick patties. Step 2 in the bowl of a food processor combine the chopped potatoes and onion. Mix the potato starch egg matzo salt and pepper with the potatoes and onion.
To get crispy latkes the potato and onion mixture needs to be dry. Using a food processor with a coarse grating disc grate the potatoes and onion. I use an electric frying pan at 375 so it doesn t get too hot and burn the latkes.
Step 3 squeeze the potato onion mixture. Spread 1 4 cup potato mixture for each latke into 3 1 2 inch circles in skillet. This gives the latkes just the right amount of fluffiness with all the goodness of the crispy strings.
Place a large heavy skillet preferably cast iron over medium heat and warm while you mix the latke mixture. Pulse the mixture until it forms a pulp like puree scraping down the sides of the work bowl once or twice. Tie the cheesecloth around the handle of a wooden spoon for extra leverage in squeezing.
In large bowl stir together simply potatoes better n eggs flour green onion pepper salt and baking powder. Heat 1 tablespoon oil in a 12 inch nonstick skillet over medium heat. Spread 1 4 cup potato mixture for each latke into 3 1 2 inch circles in skillet.
