Recipe Lentil Parsnip Soup
Let soup simmer for about 25 minutes allowing all the flavors to blend together.

Add the vegetable stock and boil your mixture for 10 minutes before reducing the heat covering and simmering for a further 20 minutes. Stir well and simmer for 15 minutes. Reduce the heat slightly and cook for 30 mins stirring occasionally until the parsnips are very soft and the lentils mushy.
In the last 30 minutes i add 4 cups spinach three potatos and smoked sausage. This is served great with parmesean cheese and garlic mozerella bread. Add vegetable stock cover and simmer for 30 minutes or until the vegetables are soft.
