Recipe mashed potato fritters. Use your hands to scoop out about cup of the potato mixture and form round patties with your hands. When dried out mash the potatoes as you normally would. Wet hands and form patties. In a large bowl combine the mashed potatoes cheese scallions egg and 3 tablespoons flour and salt and pepper and mix until combined.
Make sure the fritters don t stick to the bottom of the pan. Stir these ingredients together until all have been fully blended into the mashed potatoes. Boil the potatoes in a large pot of heavily salted water.
Divide mixture into 12 portions. Cheddar cheese sour cream kosher salt all purpose flour egg and 4 more. In a large bowl combine the mashed potato cup flour and salt and other add ins if using.
Place remaining flour in a shallow dish and dredge each pancake lightly in flour. Add a few tbsp of oil to a hot pan and fry the fritters until golden. Pour the panko crumbs out onto a dinner plate.
Cook as you would mashed potatoes. When done drain and let them rest on an uncrowded pan or plate to cool down. Chop the green onion around 3 tbsp and add to the mashed potatoes along with the onion and flour and season with salt.
