Greek Lentil Soup Recipe

Greek lentil soup recipe. Simmer until lentils are tender 30 to 45 minutes. Add enough water to cover vegetables. Add oil bay leaves salt and pepper.

Place the water broth lentils carrots onion celery and 1 2 teaspoon oregano in a 5 or 6 qt. Pour in lentils 1 quart water oregano rosemary and bay leaves. Heat olive oil in a saucepan over medium heat.
Pour in the olive oil and the red wine vinegar and season well with salt and pepper. If you prefer your greek lentil soup to be reddened then add 1 tablespoon of tomato paste. Cook and stir until the onion has softened and turned translucent about 5 minutes.
Reduce heat and simmer vegetables until slightly tender about 15 minutes. Combine onion carrots celery and garlic in a stockpot. Add garlic onion and carrot.
Bring mixture to a boil.
