Lemon Curd Tart Recipe Thermomix
Add 165 grams raw sugar to 150 grams of butter cut into small cubes or shaved.
Lemon curd tart recipe thermomix. Might be easier to pour final curd whilst in oven carefully. Used the tbc sweet shortcrust recipe for individual tarts and filled with this curd. Bake 30 45min or longer until just set.
We loved this curd. Cook 12 minutes 60 degrees speed 3. Add the eggs extra egg yolks caster sugar butter and lemon juice and cook on speed 4 10 minutes 80 degrees.
Mix at speed 5 for 15 seconds. I used 3 large lemons but only the rough zest of 2 and milled this with the sugar for 10 sec speed 9. Once cooked it should resemble a sauce like consistency.
Grate the zest then juice the lemons and add to the thermomix bowl along with the butter eggs and sugar. Finish with icing sugar and zest optional. Reduce oven to 140 degrees.
Scrape down the sides of the bowl and repeat until only a very fine zest remains. While the curd is cooking prepare your tart shells for cooking. Clean and dry the thermomix bowl.
Finely grate on speed 10 for 10 seconds. Remove from oven once done it will set more as it cools. Roll the lemons on the bench top with the palm of your hand in order to release more juice.
