Recipe Cauliflower Mashed Like Potatoes
A friend of the low carb and paleo lifestyle cauliflower mash almost looks feels and tastes like mashed potatoes if you include a dairy based thickener such as a soft cream cheese and butter.
Recipe cauliflower mashed like potatoes. Add cauliflower florets and cook until tender 10 minutes. Substitute the cheese and butter with a dairy based thickener redolent of fat such as thick greek yogurt. Drain any excess water and transfer to a medium sized bowl.
Heat olive oil in a small saucepan over medium heat. You can make fat friendly cauliflower mash too. Add cup of water to a medium sized pot and bring to a boil over high heat.
Separate the cauliflower into florets and discard the core. 1 2 heads fresh cauliflower roughly chopped into uniform large pieces or 1 2 bags frozen 4 tbsp butter 2 tbsp cream cheese or sour cream optional 2 tbsp or more parmesan grated optional. Steam the cauliflower for 10 minutes until florets are softened.
Blend drained cauliflower and cream in a blender until smooth. Bring a large pot of water to a boil. Stir parmesan cheese butter cream cheese and sea salt through the blended cauliflower.
Cook and stir until hot about 5 minutes. Bring about 2 cups of water to a simmer in a pot then add the cauliflower. Cook the cauliflower for 12 15 minutes or until very tender.
Cover and turn the heat to medium.
