Separate lamb chops on a baking sheet and give them enough room to spread out. The lamb chops are cooked medium when the internal temperature registers 135 f. Season lamb with salt and pepper moisten with olive oil and rub with dijon mustard.
Place the lamb chops on a baking tray and place in the preheated oven for 30 minutes until cooked. This will still give you a little bit of pink inside your lamb chops. Preheat oven to 400 f.
Preheat your oven 350 degrees. Add the rest of the oil to the pan add the potatoes then fry for 4 5 minutes until starting to brown. Add the chops and cook for 2 3 minutes per side until brown.
