Recipe Spanish Omelette Oven
In this recipe i cook my spanish omelette in a frying pan on the stove top.

Grab a medium sized sauce pan add 2 yukon gold potatoes add enough water to cover the potatoes by at least 1 inch season with sea salt and turn the burner to a high heat once the water begins to boil add a lid and lower the fire to a low medium heat after about 20 25 minutes the potatoes should be perfectly cooked remove from the heat and run cold water on them and set aside. Preheat a large skillet over medium heat and add the olive oil. Heat a knob of butter in a medium about 24cm frying pan over a low heat and cook gently for 10 15 until starting to go brown add the peppers and cook for a further 5 mins.

Drizzle 2 tablespoons of oil into a small frying pan over a medium heat then add the onion and potatoes. Peel and finely slice the onion. Loosen bottom of omelet with a spatula invert a large plate over the pan and carefully turn the omelet out onto it.
Turn the omelette upside down onto a plate to let cool. Once the oil has heated add the potatoes and onions and cook stirring gently until the potatoes are tender and the onions are translucent. Put the pan back on the heat and use the palette knife to gently ease the omelette back in.
But you can bake it in an oven if you like. Strain the potatoes and onion through a colander into a large bowl set the strained oil aside. Preheat the oven to 375 f.
Heat the butter and oil in a small heavy based ovenproof frying pan and when hot pour in the omelette mix and cook gently for 5 minutes. Cook omelet on the stove top or in the oven. By this time the bottom of the omelette should be set and rather than turn it simply sit the pan under the grill for a few minutes to set the top.
