Jerk Chicken Original Recipe
1 tbsp jerk seasoning paste 1 tsp chicken seasoning 1 tsp jerk seasoning massage seasoning mix in and around the chicken optional cut off backbone.
Jerk chicken original recipe. Grill the meat slowly until cooked turning regularly. Mix the chicken pieces around to coat them completely cover and marinate at least 6 hours. In a food processor or blender combine the green onions onion jalapeno pepper soy sauce vinegar vegetable oil brown sugar thyme cloves nutmeg and allspice.
Cover and refrigerate overnight. Pour the marinade into a large shallow dish add the chicken and turn to coat. Leave the chicken in the fridge to marinade overnight.
Add your garlic and scotch bonnet pepper and allow to saute for about 4 minutes. With the machine on add the the soy sauce and oil in a steady stream. Cover and place in the refrigerator for at least 6 hours.
Cut the chicken up in to 4 pieces. Mix for about 15 seconds. Refrigerate for 4 to 6 hours or overnight.
Put the chicken in a large bowl and pour over the marinade. You are now ready to prepare your jerk sauce marinade to add to your chicken. Massage seasoning into chicken and slits marinate chicken in fridge for upto 8 hours then cook for 45 mins in oven 180 degrees.
Add all the other jerk paste ingredients and continue blending to until obtaining a paste. Cook for total 1. Blend all of the ingredients excluding the chicken in a blender to make the jerk sauce.
