Jerk Chicken Recipe Mild
Place the spice rubbed chicken breasts on the hot grill or skillet.

Jamaican jerk seasoning classically contains ground cinnamon. You can layer the spice mixture on the chicken as thick or thin as you like there should be enough to cover about 4 large chicken breasts or 1 1 2 lbs. Let the chicken sit for about 5 minutes then garnish with cilantro if desired.
Put the chicken in a large bowl and pour over the marinade. In a food processor combine the onion scallions chiles garlic five spice powder allspice pepper thyme nutmeg and salt. With the machine on add the the soy sauce.
Step 2 preheat oven to 350 degrees f 175 degrees c. Place the chicken in the oven uncovered and allow to cook for about 45 minutes till an hour. Mix the chicken pieces around to coat them completely cover and marinate at least 6 hours.
If you want the skin to be crispy broil the chicken for a few minutes before removing. Rub chicken well with lime oil mix. Bake chicken legs until cooked through and skin is crispy about 45 50 minutes rotate chicken half way through roughly 20 minutes.
However if you re sensitive to cinnamon feel free to start with 1 4 tsp the first time making this dish. Whisk together lime juice and olive oil. Serve with chicken or mix with chicken serve with beans and rice featured here.
