Recipe Ham Mushroom Pasta

In a large frying pan add olive oil mushrooms parsley oregano salt and water cook almost covered on medium heat stirring occasionally until mushrooms are cooked and water has almost evaporated. Sauté for 5 6 minutes until the mushrooms are golden. While mushrooms are cooking boil and cook the pasta al dente.
Melt the butter in a saucepan and then fry the chopped onions and crushed garlic gently until the onions are soft and translucent. Cook the pasta according to pack instructions then drain. Cook and stir until tender about 5 minutes.
While the pasta is cooking mix together the egg yolks cream and cheese in a bowl. Fry the mushrooms for a couple of mins then scoop out and set aside. This is a keeper.
Add the chopped mushrooms and continue to fry slowly until the mushrooms soften about 5 minutes stir in the ham and the crushed peppercorns. Mix the cornflour into the milk and add. Cook until browned about 5 minutes.
Cook and stir until mushrooms are tender about 8 minutes. Mix in ham and cook until warmed through stirring once or twice 1 to 2 minutes. Return pasta to saucepan.
Season with salt and pepper. Toss with pasta adding enough pasta water to create a sauce that coats pasta. Heat oven to 200c fan 180c gas 6 then melt a little butter in a large saucepan.
