Recipe using kale and cauliflower. In a large stock pot heat olive oil and add diced onions cook for 5 to 7 minutes until onions become translucent. Fry the garlic and onion for 1 minute until fragrant be careful not to burn. Stir in the drained potatoes and cauliflower and mash all together.
Season with pepper to taste. Add salt and garlic powder. Spread cauliflower evenly on the baking sheet and roast until golden brown usually 20 30 minutes.
Turn off the heat and stir in the chopped kale. Leave to steam for 5 7 minutes until the kale has wilted down. Transfer to the pot with the greens and add 2 teaspoons of butter teaspoon of salt and pepper.
Cover and cook for 6 to 7 minutes until wilted. Taste and adjust the flavor as needed. In a blender puree the cauliflower with milk.
Preheat oven to 350 degrees. Add the kale to the frying pan and cover with a lid or large plate. Add the riced cauliflower to the skillet and stir to mix everything together well and coat in melted butter.
Add garlic and cook for 2 minutes or until garlic becomes fragrant. Stir in the sour cream and parmesan for some extra flavor. To serve transfer to a bowl and top with the remaining teaspoon of butter.
